Add sugar and beat until light and fluffy, about 5 minutes on medium speed of an electric mixer fitted with a paddle attachment or about 7 minutes by hand with a wooden spoon or rubber spatula in a medium bowl. Add eggs one at a time, beating well after each addition. Beat in baking soda until blended; then add buttermilk and beat just until blended (do not overmix). Pour batter into prepared pans; smooth tops evenly with offset spatula if necessary to eliminate any air bubbles from batter surface as this will result in cracks when baked later on top of frosting layer underneath should there be any cracks formed during baking process which can cause some leakage while cutting into pieces later on down road so best way around this issue is by using offset spatulas when spreading out your batter evenly across pan surfaces before placing them into ovens which may take up more time compared to using other methods like dropping all ingredients into blender together then blending them together until smooth consistency has been achieved but either way will still work just fine once baked according
